What’s rich, red, and shimmers like a Mazda in sunlight? That would be Brendan Pang’s vibrant Soul Red Crystal sauce, a multi-sensory culinary experience that excites both the eye and the palate.
The Mazda ambassador, chef and Bumplings restaurant owner joins Mazda at the Night Noodle Markets with a special adaptation of his renowned chilli oil recipe.
Inspired by Mazda’s premium shade of Soul Red Crystal Metallic paint, Brendan’s sauce is the perfect addition to dumplings, rice or noodle dishes. Sweet and fragrant, its punchy flavours and a rich, spicy aroma combine with vibrant colour to match the boldness of Mazda’s iconic red paint finish.
Ahead of Mazda x Bumplings Night Noodle Markets experience, Brendan has shared his Soul Red Crystal sauce recipe, so you can impress your guests at your next home dinner party, or simply transform a mid-week meal into a culinary sensation.
MAKE IT AT HOME: SOUL RED CRYSTAL SAUCE
1L grapeseed oil
3 cinnamon sticks
10 star anise, whole
4 bay leaves
¼ cup crushed Asian chilli flakes
¼ cup crushed Korean chilli flakes (Gochugaru)
2 tsp salt flakes
Edible red glitter or cocktail glitter, the special ingredient to bring a touch of shimmer
Place oil, cinnamon, star anise and bay leaves in a small saucepan over low heat and cook for about 25 minutes to infuse (be careful not to burn your spices here). Whilst the oil is infusing, place chilli flakes and salt into a medium heatproof bowl. Once oil is fragrant, increase heat to high and cook for a further minute. Carefully strain the oil through a fine sieve into the bowl with the chilli flakes and stir well.
